Although accessible year-round, garlic is at its best in the spring and early summer when it is freshly collected; the skin is not quite firm and is almost all white, and the sensitive, young cloves are wet. Garlic loses its sweetness and develops a strong flavor as it ages and dries, and its skin becomes brittle and the cloves start to yellow and wrinkle. Old garlic is still useful in cooking, but because of its potent flavor, use it sparingly in recipes that are served raw.
